Light Tuna Pâté Lettuce Wraps with Sundried Tomatoes, Croutons and Crispy Bacon

Ingredients

  • 1 pot Castle MacLellan Light Tuna Pâté 100g
  • 1 romaine lettuce
  • 1 avocado
  • 1 pack sundried tomatoes
  • 1 pack croutons
  • 1 pack crispy bacon chop into pieces
  • Squeeze of lemon juice
  • Chopped parsley for garnish

Instructions

  1. Remove outer leaves from the romaine lettuce and the core
  2. Separate the leaves and make 4 wraps (2 leaves per wrap)
  3. Divide 2/3 of the light tuna pâté pot between the 4 wraps
  4. Peel and dice the avocado, add a squeeze of lemon
  5. In a bowl add the remaining 1/3 of the light tuna pâté pot, 1 tbsp water, sun dried tomatoes, croutons and avocado and gently mix together
  6. Divide the mixture between the 4 wraps and place on top of the light tuna pâté
  7. Finish with a sprinkle of parsley and the crispy bacon pieces
